Mac and Tease
A special occasion dinner for your best friend.
(for dogs)
1/2 cup elbow macaroni
canola oil
1/2 cup cooked cauliflower
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1/2 cup 2 percent Greek yogurt
1/4 cup cream cheese
1 large egg, lightly beaten
1 tablespoon Parmesan cheese
1 tablespoon Panko bread crumbs
Use a 12 cupcake mini-cupcake pan. Cook the macaroni according to package and drain. Preheat oven to 425. Brush each well of the pan with canola oil.
Melt the butter in a pot and whisk in the flour. Cook about two minutes and whisk in the yogurt. Bring to a boil and cook five minutes. Add the cream cheese and whisk until melted. Remove from heat and whisk in the egg.
Fold in the macaroni. Use a measuring spoon to add a heaping tablespoon to each well. Mix the Parmesan with the Panko bread crumbs and sprinkle over each filled well. Bake for 10 minutes. Let stand for 5 minutes. Use a thin knife to loosen and remove.
